Moi Moi is a savory steamed bean pudding made from ground black-eyed peas, onions, and spices. Here's a basic guide on how to make it:
Ingredients:
2 cups of dried black-eyed peas
1 large onion
1-2 red bell peppers (Tatashe) for color and flavor
1-2 scotch bonnet peppers (Ata rodo) for heat (adjust to your spice preference)
1/2 cup of palm oil or vegetable oil
1-2 cubes of stock (Maggi or Knorr)
Salt to taste
Optional: Boiled eggs, fish, corned beef, shrimp (for added richness)
Moi Moi leaves (Uma leaves), food-safe plastic cups, or ramekins for molding
Steps:
1. Prepare the Beans:
Rinse the black-eyed peas thoroughly.
Soak them in water for at least 30 minutes, then rub them vigorously to remove the skins. You can do this by hand or with a blender on a low setting.
Rinse the peeled beans thoroughly until the water runs clear. This is a crucial step!
2. Blend the Ingredients:
Put the peeled beans into a blender.
Add the chopped onion, bell peppers, and scotch bonnet peppers.
Add about 1-2 cups of water to start, and blend until you have a smooth, thick batter. Add more water a little at a time if needed, but keep it thick.
3. Season the Batter:
Pour the batter into a large bowl.
Stir in the palm oil or vegetable oil, crumbled stock cubes, and salt to taste.
If you're adding any optional ingredients like pre-cooked fish or shrimp, fold them in now.
4. Prepare for Steaming:
Line your Moi Moi leaves, grease your cups, or prepare your ramekins.
If using leaves, wilt them slightly over heat to make them pliable.
5. Molding the Moi Moi:
Pour the batter into your prepared molds, filling them about ¾ full.
If using boiled eggs or other optional items, place them in the center before filling completely.
6. Steam the Moi Moi:
Arrange the filled molds in a large pot or steamer. Make sure they are upright.
Add water to the pot, making sure it doesn't reach the top of the molds.
Cover the pot tightly and steam over medium heat for about 45-60 minutes, or until the Moi Moi is firm and a skewer inserted comes out clean.
Tips for Success:
Bean Peeling: This is the most time-consuming part. Some people use a food processor for easier peeling.
Batter Consistency: The batter should be thick but pourable. Too thin and it will be watery, too thick and it might not cook evenly.
Don't Overfill: Leave some space for the Moi Moi to expand as it steams.
Water Level: Ensure the water level in the steaming pot is appropriate so it doesn't get into the Moi Moi itself.
