Africa foods

 Africa’s food scene changes completely from North to South. Here’s a tour of the big ones, with how to make them here in Africa.



*West Africa – Bold, spicy, tomato-based*

*Jollof Rice*  

Nigeria, Ghana, Senegal. The party staple.  

_How_: Fry blended tomatoes, onions, peppers with tomato paste. Add parboiled rice + chicken broth + thyme, curry, bay leaves. Simmer covered on low heat. Don’t stir much – you want that smoky “bottom pot” layer.


*Fufu + Light Soup*  

Ghana, Nigeria, Ivory Coast. Pounded starchy side for scooping.  

_How_: Boil cassava + plantain or yam. Pound/mash until smooth and stretchy. Light Soup: tomatoes, onions, garlic, ginger, chili, fish or goat meat simmered in broth.


*Suya*  

Nigeria. Street food beef/chicken skewers.  

_How_: Marinate meat in suya spice: ground peanuts, paprika, ginger, garlic, cayenne, salt. Grill over charcoal. Serve with onions + cabbage.


*East Africa – Spiced stews + flatbreads*  

*Ugali + Sukuma Wiki*  

Kenya, Tanzania. Daily staple.  

_How_: Ugali = stir maize meal into boiling water until stiff like thick polenta. Sukuma Wiki = sautΓ© onions, tomatoes, then add collard greens/kale, simmer 10 min.


*Injera + Doro Wat*  

Ethiopia, Eritrea.  

_How_: Injera = ferment teff flour + water 2-3 days, pour thin on hot pan like crepe. Doro Wat = slow-cook chicken in berbere spice, onions, garlic, hard-boiled eggs. Deep red, spicy.


*North Africa – Mediterranean + Middle Eastern influence*  

*Tagine*  

Morocco, Algeria. Slow-cooked stew.  

_How_: Chicken or lamb + onions, garlic, preserved lemon, olives, saffron, cinnamon. Simmer low with carrots/potatoes. Serve over couscous. Regular pot works if you don’t have a tagine.


*Couscous + Merguez*  

Maghreb region.  

_How_: Steam couscous grains. Merguez = spicy lamb sausages grilled. Top with stewed vegetables and broth.


*Southern Africa – Meat + maize heavy*  

*Bobotie*  

South Africa. Curried mince bake.  

_How_: Mix ground beef with fried onions, curry powder, chutney, soaked bread, raisins, almonds. Bake, then pour egg-milk custard on top. Bake 30 min until golden.


*Pap + Braai*  

South Africa, Zimbabwe, Zambia.  

_How_: Pap = like ugali, made from maize meal. Braai = grilled meat over open fire, marinated with peri-peri or braai spice.


*Common prep tricks across Africa:*

1. Start with onions + garlic + ginger base for most stews

2. Use spice blends: berbere, suya, peri-peri, ras el hanout  

3. Cook low and slow – flavors deepen a lot

4. Starch + sauce is the formula: rice/ugali/fufu/injera/cous + stew


 here are 3 full recipes with measurements for 4 people. All use ingredients you can find at a regular grocery store:

*1. Nigerian Jollof Rice*  

*Ingredients:*

- 2 cups long grain rice, rinsed

- 4 large tomatoes + 1 red bell pepper + 1 scotch bonnet, blended

- 1 can tomato paste

- 1 large onion, chopped + 1 onion sliced for later

- 3 cloves garlic, 1 tbsp ginger, grated

- 1/3 cup oil

- 2 tsp thyme, 2 tsp curry powder, 2 bay leaves

- 3 cups chicken broth

- Salt to taste

- Protein: 1 lb chicken, seasoned + fried, or just skip for veggie version


*How to make:*

1. Fry the chopped onion in oil until soft. Add tomato paste, fry 3 min.

2. Add blended tomato mix, garlic, ginger. Cook 15-20 min until thick and oil starts to separate. Add thyme, curry, salt.

3. Add rice + broth. Stir once. Lay bay leaves + sliced onions on top. Cover tight, cook on LOW 25-30 min. Don’t stir.

4. Turn off heat, let sit 10 min. Fluff with fork. Serve with fried chicken.


*2. Ugali + Sukuma Wiki*  

*For Ugali:*

- 2 cups maize meal/cornmeal

- 4 cups water

- Pinch of salt


*How*: Boil 3 cups water + salt. Slowly add maize meal, stirring hard to avoid lumps. When it thickens, add remaining 1 cup water gradually while stirring. Cook 5 min until it pulls away from the pot. Should be stiff enough to roll into a ball.


*For Sukuma Wiki:*

- 1 bunch collard greens or kale, chopped

- 1 onion, sliced

- 2 tomatoes, chopped

- 2 tbsp oil, salt, pinch of curry optional


*How*: Fry onion in oil 3 min. Add tomatoes, cook 5 min. Add greens + 1/4 cup water + salt. Cover, simmer 10 min until tender.


*3. South African Bobotie*  

*Ingredients:*

- 1 lb ground beef

- 1 onion, chopped

- 2 slices bread, soaked in 1/2 cup milk

- 2 tbsp curry powder, 1 tsp turmeric

- 2 tbsp apricot jam or chutney

- 1/4 cup raisins, 1/4 cup sliced almonds

- 2 eggs + 1 cup milk for topping


*How:*

1. Fry onion, add beef, brown it. Add curry, turmeric, salt. Squeeze soaked bread, add bread + jam + raisins + almonds. Cook 5 min.

2. Put mix in baking dish. Beat eggs + milk, pour over top.

3. Bake 30 min at 350°F until custard is set and golden.
